- Fish Sauce3 Tbsp fish sauce (caramelize 1 Tbsp at a time in hot pan) (45 ml)
- Rice Vinegar1 cup unseasoned rice vinegar (240 ml)
- Scallion¼ cup sliced scallions (60 ml)
- Ginger1 (½") piece ginger, peeled, finely grated (8 g)
- Saltabout ¼ tsp (2 g)
Method
- Pour to the lines in order (bottom → top): RICE VINEGAR, FISH SAUCE.
- Add by count: 1 SCALLION.
- Season to finish: GINGER (about 2½ tsp), SALT (to taste).
- Cap the jar and shake until emulsified.
