- Olive Oil — 1 tsp (5 ml)
- Onion — 3 cups (450 g)
- Garlic — 5 cloves
- Jalapeno — 2
- Raisins — 1/3 cup (50 g)
- Cognac — 1/2 cup bourbon (120 ml)
- Cola — 1/2 cup (120 ml)
- Espresso — 1/2 cup coffee (120 ml)
- Ketchup — 1/2 cup (120 ml)
- Soy Sauce — 4 Tbsp (60 ml)
- Balsamic — 4 Tbsp (60 ml)
- Molasses — 2 Tbsp (30 ml)
- Worcester — 2 Tbsp (30 ml)
- Black Beans — 2 Tbsp (30 g)
- Dry Mustard — 1 Tbsp (6 g)
- Allspice — 2 tsp (4 g)
- Pepper — 2 tsp (4 g)
- Cayenne — 2 tsp (4 g)
- Smoked Paprika — 1 tsp (2 g)
- Lime Juice — juice of 1 lime (30 ml)
Method
- This sauce is cooked on the stove — the jar is for storing it, not making it.
- Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
- Finish off heat; adjust seasoning.
