Ingredients

  • Sherry1 cup sweet sherry, reduced to two-thirds (160 ml)
  • Lime Relish4 tbsp Patak's Mild Lime Relish (60 ml)
  • Mango Chutney4 tbsp mango chutney (60 ml)
  • Red Wine Vinegar1 cup red wine vinegar (240 ml)
  • Olive Oil1 cup extra virgin olive oil or canola oil (240 ml)
  • Tarragon1 tbsp chopped fresh tarragon (15 ml)
  • Saltsalt (2 g)
  • Pepperpepper (0.5 g)

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
