Ingredients

  • Aji Panca4 cups ají panca puréed (960 ml)
  • Red Wine Vinegar1 cup red wine vinegar (240 ml)
  • Oregano2 Tbsp ground oregano (30 ml)
  • Cumin1 Tbsp cumin (15 ml)
  • Garlic2 Tbsp ground garlic (30 ml)
  • Saltsalt (5 g)
  • Pepperpepper (2 g)

Method

  1. Pour to the lines in order (bottom → top): Aji Panca, Red Wine Vinegar, Oregano, Cumin, Garlic.
  2. Add finishing notes: Salt, Pepper.
  3. Cap the jar and shake until emulsified.
