Ingredients

  • Garlic6 dientes de ajo
  • Sherry Vinegar120 g vinagre de Jerez
  • Cider Vinegar140 g vinagre de manzana
  • Sherry100 g manzanilla (vino generoso)
  • Soy Sauce60 g salsa de soja
  • Olive Oil150 g AOVE
  • Sunflower Oil500 g aceite de girasol
  • Paprika½ cc pimentón dulce (2.5 ml)
  • Smoked Paprika2 cc pimentón de la Vera (ahumado) (10 ml)
  • Water70 g agua
  • Oregano2 cc orégano fresco (10 ml)
  • Sea Salt12 g sal gorda

Method

  1. Pour to the lines in order (bottom → top): Sherry Vinegar, Cider Vinegar, Sherry, Soy Sauce, Olive Oil, Sunflower Oil, Paprika, Smoked Paprika, Water, Oregano.
  2. Add finishing notes: Garlic, Sherry, Sea Salt.
  3. Cap the jar and shake until emulsified.
