Ingredients

  • Aji Amarillo4 ají amarillo (seeded)
  • Rocoto1 whole rocoto (seeded)
  • Aji Limo1 ají limo (seeded)
  • Cracker6 soda crackers
  • Queso Fresco2 cups queso fresco (450 g)
  • Evap. Milk½ cup evaporated milk (120 ml)
  • Vegetable Oil¼ cup oil (60 ml)
  • Lime Juicedrops of lime at end (5 ml)

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
