Ratio by volume: Cilantro 15 ml, Lemon Juice 90 ml

Ingredients

  • Red Onion½ red onion thinly sliced (soak iced water 5 min) (75 g)
  • Aji Limo1 limo chile seeded/sliced
  • Cilantro1 Tbsp chopped cilantro (15 ml)
  • Lemon Juicejuice of 3 small lemons (90 ml)
  • Saltsalt (3 g)

Method

  1. Pour to the lines in order (bottom → top): Cilantro, Lemon Juice.
  2. Add finishing notes: Red Onion, Aji Limo, Salt.
  3. Cap the jar and shake until emulsified.
