Ratio by volume: Lime Juice 80 ml, Brown Sugar 38 ml, Soy Sauce 20 ml, Salt 3 ml

Ingredients

  • Lime Juice1/3 cup (80 ml) lime juice
  • Brown Sugar2 1/2 Tbsp brown sugar (37.5 ml)
  • Soy Sauce4 tsp soy/tamari (20 ml)
  • Garlic1 garlic clove grated
  • Bird's Eye Chile1 fresh Thai red chile finely sliced
  • Salt1/2 tsp sea salt (2.5 ml)

Method

  1. Pour to the lines in order (bottom → top): Lime Juice, Brown Sugar, Soy Sauce, Salt.
  2. Add finishing notes: Garlic, Bird's Eye Chile, Salt.
  3. Cap the jar and shake until emulsified.
