Ingredients

  • Jalapeno3/4 lb red jalapeño or Fresno stemmed (340 g)
  • Serrano1/4 lb red serrano stemmed (115 g)
  • Jalapeno1/2 lb green jalapeño stemmed (230 g)
  • Garlic4 cloves
  • Sugar2 Tbsp (25 g)
  • Brown Sugar2 Tbsp (25 g)
  • Salt1 to 2 tsp kosher (mid 1.5) (9 g)
  • White Wine Vinegar1/2 cup distilled white vinegar (120 ml)

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
