Ingredients

  • Orange Zestzest of 1 orange (2 g)
  • Orange Juicejuice of 1 orange (45 ml)
  • Lemon Zestzest of 1 lemon (2 g)
  • Lemon Juicejuice of 1 lemon (30 ml)
  • Lime Zestzest of 1 lime (1.5 g)
  • Lime Juicejuice of 1 lime (30 ml)
  • Honey1½ Tbsp honey (22.5 ml)
  • Champagne1 Tbsp Champagne or white wine vinegar (15 ml)
  • Salt1 tsp kosher salt (5 g)
  • Pepperpepper (0.5 g)
  • Olive Oil¾ cup EVOO (180 ml)

Method

  1. Pour to the lines in order (bottom → top): Orange Juice, Lemon Juice, Lime Juice, Honey, Champagne, Olive Oil.
  2. Add finishing notes: Orange Zest, Lemon Zest, Lime Zest, Salt, Pepper.
  3. Cap the jar and shake until emulsified.
