A bright dressing for salads and vegetables.

Ingredients
- Orange Zest — zest of 1 orange (2 g)
- Orange Juice — juice of 1 orange (45 ml)
- Lemon Zest — zest of 1 lemon (2 g)
- Lemon Juice — juice of 1 lemon (30 ml)
- Lime Zest — zest of 1 lime (1.5 g)
- Lime Juice — juice of 1 lime (30 ml)
- Honey — 1½ Tbsp honey (22.5 ml)
- Champagne — 1 Tbsp Champagne or white wine vinegar (15 ml)
- Salt — 1 tsp kosher salt (5 g)
- Pepper — pepper (0.5 g)
- Olive Oil — ¾ cup EVOO (180 ml)
Method
- Pour to the lines in order (bottom → top): Orange Juice, Lemon Juice, Lime Juice, Honey, Champagne, Olive Oil.
- Add finishing notes: Orange Zest, Lemon Zest, Lime Zest, Salt, Pepper.
- Cap the jar and shake until emulsified.
