  • Hot Mustard1 Tbsp mustard (15 ml)
  • Barolo Vinegar3 Tbsp Barolo vinegar (45 ml)
  • Saltabout ¼ tsp (2 g)
  • Pepperabout ¼ tsp (0.5 g)
  • Grapeseed Oil⅔ cup (163 ml)
  • Olive Oilabout ¼ cup (55 ml)
  • Shallotchopped shallot after emulsion

Method

  1. Pour to the lines in order (bottom → top): GRAPESEED OIL, OLIVE OIL.
  2. Season to finish: HOT MUSTARD (to taste), BAROLO VINEGAR (to taste), SALT (to taste), PEPPER (to taste), SHALLOT (to taste).
  3. Cap the jar and shake until emulsified.
