Ingredients
- Dashi — だし カップ2+1/2 (500 ml)
- Rice Vinegar — 酢 大さじ2+1/3 (35 ml)
- Light Soy — うす口しょうゆ 大さじ2 (30 ml)
- Sugar — 砂糖 大さじ1+2/3 (25 ml)
- Kombu — 昆布 10g
- Dried Chile — 赤とうがらし 1本
Method
- Pour to the lines in order (bottom → top): Dashi, Rice Vinegar, Light Soy, Sugar.
- Add: Kombu, Dried Chile.
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
