Ingredients

  • Tomatillo1 pound husked (454 g)
  • Chile3 to 5 dried chipotle moritas (mid 4)
  • Onion1 small white, sliced (110 g)
  • Garlic4 cloves
  • Peanuts1/4 cup roasted (35 g)
  • Worcester1 Tbsp (or soy) (15 ml)
  • Water3/4 cup (+ more to thin) (180 ml)
  • Saltabout 1 tsp (6 g)
  • Sugarabout 1 tsp optional (4 g)

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
