Ingredients

  • Tomatillo150 g
  • Papayaabout ½ papaya (150 g)
  • Onionabout ½ onion (40 g)
  • Serranoabout 5 serranoes (30 g)
  • Garlicabout 3 cloves (15 g)
  • Lime Juice6 tbsp lime juice (90 ml)
  • Mint3 tbsp mint (45 ml)
  • Saltabout ¼ tsp (2 g)

Method

  1. Pour to the lines in order (bottom → top): LIME JUICE.
  2. Shake-to-line (dashed marks): add GARLIC. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: 7½ TOMATILLOS, ½ PAPAYA, ½ ONION, 7½ SERRANOS, 1 BUNCH MINT.
  4. Season to finish: SALT (to taste).
  5. Cap the jar and shake until emulsified.
