  • Red Onionabout 1 onion (125 g)
  • Habaneroabout 1 habanero (9 g)
  • Oreganoabout ¼ bunch (0.6 g)
  • Lime Juiceabout ¼ cup (56 ml)
  • Orange Juiceabout 1½ Tbsp (19 ml)
  • Cider Vinegar2½ tsp (12 ml)
  • Salt½ tsp (3 g)
  • Cinnamonpinch from spice sachet (0.5 g)
  • Bay Leafpinch (0.3 g)
  • Allspicepinch (0.5 g)
  • Corianderpinch seeds (0.5 g)
  • Clovepinch (0.2 g)

Method

  1. Pour to the lines in order (bottom → top): LIME JUICE, ORANGE JUICE, CIDER VINEGAR.
  2. Add by count: 3½ RED ONIONS, 3½ HABANEROS.
  3. Season to finish: OREGANO (about 2½ tsp), SALT (about 1½ tsp), CINNAMON (about ¾ tsp), BAY LEAF (4½ leaves), ALLSPICE (about ½ tsp), CORIANDER (about ½ tsp).
  4. Cap the jar and shake until emulsified.
