- Guajillo7 chiles guajillos (2.6 oz/76g), stemmed and seeded
- Dried Chile3 dried chiles de arbol (0.1 oz/3g), stemmed
- Tomato4 medium Roma (15 oz/432g), cored but left whole
- Onion1/4 medium white (3.7 oz/105g)
- Tomatillo1 medium (2.2 oz/64g), husked and rinsed
- Garlic3 cloves, peeled and smashed
- Chicken Stock3 cups low-sodium vegetable or chicken broth (or water) (720 ml)
- Bouillon Pwdr6 g
- Oregano1/2 tsp dried, preferably Mexican (2.5 ml)
- Cumin1/4 tsp seeds or ground (1.25 ml)
- Salt2 1/2 tsp Diamond Crystal kosher (10g), plus more to taste
Method
- This sauce is cooked on the stove. The jar is for storing it, not making it.
- Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
- Finish off heat; adjust seasoning.
