Ratio by volume: Turmeric 15 ml, Coriander Seed 5 ml, Salt 10 ml, Neutral Oil 30 ml

Ingredients

  • Candlenut3 candlenuts or macadamias
  • Shallot4 Asian shallots or 2 French shallots
  • Garlic3 garlic cloves
  • Lemongrass½ stalk lemongrass (tender white), chopped
  • Turmeric1 Tbsp turmeric powder (15 ml)
  • Coriander Seed1 tsp coriander powder (5 ml)
  • Salt2 tsp salt (10 ml)
  • Neutral Oil2 Tbsp neutral oil (half of the 4 Tbsp frying oil called for) (30 ml)

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
