Ingredients
- Sugarabout ⅓ cup (60 g)
- Shallotabout 2 shallots (80 g)
- Garlicabout 12 cloves (60 g)
- Ginger30 g
- Sake½ cup (120 ml)
- Mirin¼ cup (60 ml)
- Soy Sauceabout 3 Tbsp (50 ml)
- Mushroom Sauceabout 2 cups (450 ml)
Method
- Pour to the lines in order (bottom → top): MUSHROOM SAUCE, SAKE, MIRIN, SOY SAUCE.
- Shake-to-line (dashed marks): add SUGAR. Spoon in, shake, and top up until the settled level reaches each dashed line.
- Add by count: ¾ SHALLOT, 4 CLOVES GARLIC.
- Season to finish: GINGER (about 1 Tbsp).
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.
