  • Lime Juice⅓ cup lime juice (79.92 ml)
  • Clove2 whole cloves
  • Long Pepper1 dried long pepper (or 10 peppercorns)
  • Cinnamon1-inch cinnamon (3 g)
  • Nutmeg⅓ nutmeg, cracked
  • Garlic1 garlic clove
  • Ginger1-inch ginger (10 g)
  • Lemongrass1 small lemongrass stalk

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
