Ingredients

  • Mayo1/2 cup mayonnaise (120 ml)
  • Yogurt1/2 cup Greek yogurt (120 ml)
  • Buttermilk1/4 cup buttermilk (60 ml)
  • Scallion1/4 cup minced scallions, green part only (60 ml)
  • Parmesan1/2 cup grated Parmigiano Reggiano, on a microplane (120 ml)
  • Pepperabout ½ tsp (1 g)
  • Lemon ZestZest of 1 lemon
  • Lemon Juice2 tsp lemon juice (10 ml)
  • Salt1/2 tsp salt (2.5 ml)

Method

  1. Pour to the lines in order (bottom → top): MAYO, YOGURT, BUTTERMILK.
  2. Shake-to-line (dashed marks): add PARM. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: 1 SCALLION.
  4. Season to finish: PEPPER (about ¼ tsp), LEMON ZEST (about 1 tsp), SALT (about ½ tsp), LEMON JUICE (about 1½ tsp).
  5. Cap the jar and shake until emulsified.
