Sumacpass Jalapeño-Lime

Ratio by volume: Lime Juice 150 ml, Olive Oil 75 ml, Jalapeno 30 ml, Salt 19 ml, Pepper 3 ml

Ingredients

  • Lime Juice½ cup + 2 Tbsp fresh lime juice (150 ml)
  • Olive Oil5 Tbsp EVOO (75 ml)
  • Jalapeno2 Tbsp minced jalapeños (with seeds) (30 ml)
  • Salt1¼ Tbsp kosher salt (18.75 ml)
  • Pepper½ tsp black pepper (2.5 ml)

Method

  1. Pour to the lines in order (bottom → top): Lime Juice, Olive Oil, Jalapeno, Salt, Pepper.
  2. Add finishing notes: Salt, Pepper.
  3. Cap the jar and shake until emulsified.
