Ingredients

  • Lime Juice1 lime, juice only (30 ml)
  • Olive Oil1 tsp (5 ml)
  • Red Wine Vinegar2 tbsp (30 ml)
  • Sesame Seed1 tbsp (15 ml)
  • Chile1 red chilli, chopped
  • Sesame Oil2 tbsp (30 ml)
  • Brown Sugar1 tbsp (15 ml)
  • Soy Sauce4 tbsp (60 ml)
  • Sichuan Pepper1 pinch of Szechuan pepper (0.3 g)
  • Scallion2 spring onions, chopped
  • Ginger1 piece, 2cm long, grated (6 g)
  • Garlic1 clove, chopped
  • Saltto taste
  • Pepperto taste

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
