- Aji Panca4 cups aji panca (960 ml)
- Red Wine Vinegar1 cup red wine vinegar (240 ml)
- Oregano2 Tbsp ground oregano (30 ml)
- Cumin1 Tbsp cumin (15 ml)
- Garlic2 Tbsp ground garlic (30 ml)
- Saltabout ¾ tsp (5 g)
- Pepperabout ¾ tsp (2 g)
Method
- Pour liquids to the printed fill-lines, bottom to top.
- Season to finish: OREGANO (about 1 tsp), CUMIN (about ¾ tsp), GARLIC (¾ clove), SALT (to taste), PEPPER (to taste).
- Cap the jar and shake until emulsified.

Yes, but keep the portions separate. Never pour marinade that touched raw meat, poultry, or seafood back over the finished dish unless you bring it to a full boil first. Set aside a clean portion before marinating if you want a table sauce too.
