Ingredients

  • Shallot100 g Schalotten
  • Star Anisestar anise
  • Cinnamon½ cinnamon
  • Ginger10 g ginger
  • Grapeseed Oil30 ml oil
  • Apple Juice200 ml Apfelsaft
  • Quince Vinegar30 g Quittenessig
  • White Balsamic30 g Weißer Balsamessig
  • Honey70 g Blütenhonig
  • Sea Buckthorn50 g Sanddorn
  • Quince100 g Quitten dice
  • Celery100 g celery dice
  • Saltsalt (2 g)

Method

  1. Pour to the lines in order (bottom → top): Grapeseed Oil, Apple Juice, Quince Vinegar, White Balsamic, Honey.
  2. Add: Shallot, Star Anise, Cinnamon, Ginger, Sea Buckthorn, Quince.
  3. Cap the jar and shake until combined.
  4. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
