  • Lime Juice1 quart lime juice (946 ml)
  • Fish Sauce¼ cup fish sauce (60 ml)
  • Sugar1½ cups sugar (360 ml)
  • Thai Chileabout 5 chiles (10 g)

Method

  1. Pour to the lines in order (bottom → top): LIME JUICE, FISH SAUCE.
  2. Shake-to-line (dashed marks): add SUGAR. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Season to finish: THAI CHILE (1 chile).
  4. Cap the jar and shake until emulsified.
