Ratio by volume: Mayo 120 ml, Grain Mustard 10 ml, Lemon Juice 10 ml, Hot Sauce 1 ml

Ingredients

  • Mayo½ cup mayonnaise (120 ml)
  • Grain Mustard2 tsp whole-grain Dijon (10 ml)
  • Lemon Juice2 tsp fresh lemon juice (10 ml)
  • Celery½ stalk celery, very finely chopped (30 g)
  • Scallion2 green onions (white + pale green), finely chopped
  • Garlic1 garlic clove, finely chopped
  • Hot Sauce¼ tsp hot sauce (or to taste)
  • Saltcoarse kosher salt (2 g)
  • Pepperblack pepper (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): Mayo, Grain Mustard, Lemon Juice, Hot Sauce.
  2. Add finishing notes: Celery, Scallion, Garlic, Salt, Pepper.
  3. Cap the jar and shake until emulsified.
