Ingredients

  • Anchovy2 anchovies, minced
  • Garlic1 clove garlic, minced
  • SaltPinch kosher salt (0.5 g)
  • Egg Yolk2 large egg yolks
  • Lemon JuiceJuice of 1 lemon (30 ml)
  • Parmesan2 Tbsp grated Parmesan (30 ml)
  • Olive Oil¼ cup EVOO (60 ml)
  • Buttermilk1 cup buttermilk (240 ml)
  • Sour Cream½ cup sour cream (120 ml)
  • Worcester1 Tbsp Worcestershire sauce (15 ml)
  • Dill1 Tbsp chopped dill (15 ml)
  • Parsley1 Tbsp chopped parsley (15 ml)
  • Chives1 Tbsp chopped chives (15 ml)
  • Tarragon1 Tbsp chopped tarragon (15 ml)
  • PepperFreshly cracked black pepper (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): Lemon Juice, Parmesan, Olive Oil, Buttermilk, Sour Cream, Worcester, Dill, Parsley, Chives, Tarragon.
  2. Add finishing notes: Anchovy, Garlic, Salt, Egg Yolk, Pepper.
  3. Cap the jar and shake until emulsified.
