Ingredients
- Lemon — 3 peeled lemons
- Sugar — 1 Tbsp sugar (15 ml)
- Lemon Juice — 1/2 cup lemon juice (120 ml)
- Olive Oil — 3 Tbsp olive oil (45 ml)
- Lemon Zest — zest of 1/2 lemon (1 g)
- Scallion — 1 spring onion, sliced
- Cilantro — handful coriander (10 g)
- Red Pepper — pinch of chili (0.3 g)
- Salt — salt (1 g)
- Pepper — pepper (0.3 g)
Method
- Pour to the lines in order (bottom → top): Sugar, Lemon Juice, Olive Oil.
- Add: Lemon, Lemon Zest, Scallion, Cilantro, Red Pepper, Salt.
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
