Ingredients

  • Lemon3 peeled lemons
  • Sugar1 Tbsp sugar (15 ml)
  • Lemon Juice1/2 cup lemon juice (120 ml)
  • Olive Oil3 Tbsp olive oil (45 ml)
  • Lemon Zestzest of 1/2 lemon (1 g)
  • Scallion1 spring onion, sliced
  • Cilantrohandful coriander (10 g)
  • Red Pepperpinch of chili (0.3 g)
  • Saltsalt (1 g)
  • Pepperpepper (0.3 g)

Method

  1. Pour to the lines in order (bottom → top): Sugar, Lemon Juice, Olive Oil.
  2. Add: Lemon, Lemon Zest, Scallion, Cilantro, Red Pepper, Salt.
  3. Cap the jar and shake until combined.
  4. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
