Ingredients

  • White Wine Vinegar4 cups + 1/6 cup white wine vinegar (1000 ml)
  • Saltabout 6 Tbsp (125 g)
  • Sugar2½ cups (500 g)
  • Basilabout ¾ bunch (30 g)
  • Tarragonabout 1 bunch (20 g)
  • Dillabout ¾ bunch (20 g)
  • Lemon Thyme20 g
  • Bay Leafabout 10 leaves (2 g)

Method

  1. Pour to the lines in order (bottom → top): W.WINE VINEGAR.
  2. Shake-to-line (dashed marks): add SUGAR, then SALT. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Season to finish: BASIL (about 2½ Tbsp), TARRAGON (about 1½ Tbsp), DILL (about 1½ Tbsp), LEMON THYME (about 1½ tsp), BAY LEAF (¾ leaf).
  4. Cap the jar and shake until emulsified.
