Ingredients

  • Sugar60 g azúcar (caster)
  • Shallot80 g chalotas en dados
  • Garlic60 g ajo picado
  • Ginger30 g jengibre fresco picado
  • Sake120 ml sake
  • Mirin60 ml mirin
  • Soy Sauce50 ml salsa de soja
  • Mushroom Sauce450 ml jugo de champiñón

Method

  1. Pour to the lines in order (bottom → top): Sake, Mirin, Soy Sauce, Mushroom Sauce.
  2. Add: Sugar, Shallot, Garlic, Ginger.
  3. Cap the jar and shake until combined.
  4. Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
