Ingredients
- Sugar — 60 g azúcar (caster)
- Shallot — 80 g chalotas en dados
- Garlic — 60 g ajo picado
- Ginger — 30 g jengibre fresco picado
- Sake — 120 ml sake
- Mirin — 60 ml mirin
- Soy Sauce — 50 ml salsa de soja
- Mushroom Sauce — 450 ml jugo de champiñón
Method
- Pour to the lines in order (bottom → top): Sake, Mirin, Soy Sauce, Mushroom Sauce.
- Add: Sugar, Shallot, Garlic, Ginger.
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
