  • Sugar¾ cup (150 g)
  • Water1 cup water (240 ml)
  • Fish Sauce⅔ cup (160 ml)
  • Garlicabout 4 cloves (20 g)
  • Fresno Chileabout 3½ chiles (50 g)
  • White Vinegar2 tsp White Vin (10 ml)
  • Saltabout ¾ tsp (5 g)

Method

  1. This sauce is cooked on the stove. The jar is for storing it, not making it.
  2. Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
  3. Finish off heat; adjust seasoning.
