Ingredients

  • Tamarind¼ cup + 2 Tbsp tamarind concentrate (90 ml)
  • Lime Juice2 Tbsp + 1½ tsp fresh lime juice (37.5 ml)
  • Sugar3 Tbsp sugar (45 ml)
  • Salt1½ tsp kosher salt (9 g)
  • Sriracha½ tsp Sriracha (2.5 ml)
  • Olive Oil3 Tbsp EVOO (45 ml)
  • Fish Sauce1½ tsp fish sauce (7.5 ml)
  • Garlic½ tsp garlic (microplane) (1.5 g)
  • Red Pepper Fla¼ tsp crushed red pepper flakes (0.5 g)
  • Lime Zestzest of 2 limes (2 g)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, LIME JUICE, FISH SAUCE.
  2. Shake-to-line (dashed marks): add TAMARIND. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Season to finish: SUGAR (to taste), SALT (about 2½ tsp), GARLIC (½ clove), RED PEPPER FLA (about ¼ tsp), LIME ZEST (about 1½ tsp), SRIRACHA (about ¾ tsp).
  4. Cap the jar and shake until emulsified.
