- Shallotabout ½ shallot (15 g)
- Red Chiliabout 1 chile (10 g)
- Parsleyhandful flat-leaf parsley, finely chopped (10 g)
- Rosemary1 sprig rosemary, leaves chopped
- Marjoram1 Tbsp marjoram leaves, finely chopped (15 ml)
- Capers⅓ cup (50 g)
- Olive Oilabout ⅔ cup (150 ml)
- Red Wine Vinegar3 Tbsp (45 ml)
- Saltabout ¼ tsp (2 g)
- Pepperabout ¼ tsp (0.5 g)
Method
- Pour to the lines in order (bottom → top): OLIVE OIL, RED WINE VIN.
- Shake-to-line (dashed marks): add BLACK OLIVE, then CAPERS. Spoon in, shake, and top up until the settled level reaches each dashed line.
- Season to finish: SHALLOT (¼ shallot), RED CHILI (½ chile), PARSLEY (about 2½ Tbsp), ROSEMARY (about ¾ tsp), MARJORAM (about 2 tsp), SALT (to taste).
- Cap the jar and shake until emulsified.
