Ingredients
- Paprika1 1/2 Tbsp smoked paprika (22.5 ml)
- Pepper1 tsp black pepper (5 ml)
- Cayenne3/4 tsp cayenne (3.75 ml)
- Olive Oil1/3 cup EVOO (80 ml)
- Garlic4 garlic cloves
- Sherry Vinegar3 Tbsp sherry or red wine vinegar (45 ml)
- Dijon Mustard3 Tbsp spicy/Dijon mustard (45 ml)
- Honey3 Tbsp mild honey (45 ml)
Method
- Pour to the lines in order (bottom → top): OLIVE OIL, SHERRY VINEGAR, DIJON, HONEY.
- Add by count: 4½ CLOVES GARLIC.
- Season to finish: PAPRIKA (about 1½ Tbsp), PEPPER (about 1 tsp), CAYENNE (about ¾ tsp).
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.

What if it separates?
Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
