Ingredients

  • Rice Vinegar10 tsp rice vinegar (50 ml)
  • Waterabout ⅔ cup (150 ml)
  • Sugar3 Tbsp (40 g)
  • Shallotabout 1½ shallots (50 g)
  • Ginger20 g
  • Cilantroabout ¼ bunch (4 g)
  • Espeletteabout ¾ tsp (2 g)

Method

  1. Pour to the lines in order (bottom → top): WATER, RICE VINEGAR.
  2. Shake-to-line (dashed marks): add SUGAR, then GINGER. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: 1 SHALLOT.
  4. Season to finish: CILANTRO (about 2 Tbsp), ESPELETTE (about ¾ tsp).
  5. Cap the jar and shake until emulsified.
