Ingredients

  • Red Wine Vinegar2 Tbsp fruity red wine vinegar (30 ml)
  • Sherry Vinegar2 Tbsp Spanish sherry vinegar (30 ml)
  • Cider Vinegar1 Tbsp honey or apple cider vinegar (15 ml)
  • Shallot1 Tbsp minced shallot (15 ml)
  • Thyme1 Tbsp fresh thyme leaves (15 ml)
  • Saltkosher salt, to season (2 g)
  • Pepperfreshly ground black pepper, to season (0.5 g)
  • Olive Oil1/2 cup extra-virgin olive oil (120 ml)

Method

  1. Pour to the lines in order (bottom → top): Red Wine Vinegar, Sherry Vinegar, Cider Vinegar, Shallot, Thyme, Olive Oil.
  2. Add finishing notes: Salt, Pepper.
  3. Cap the jar and shake until emulsified.
