Ingredients
- Red Wine Vinegar — 2 Tbsp fruity red wine vinegar (30 ml)
- Sherry Vinegar — 2 Tbsp Spanish sherry vinegar (30 ml)
- Cider Vinegar — 1 Tbsp honey or apple cider vinegar (15 ml)
- Shallot — 1 Tbsp minced shallot (15 ml)
- Thyme — 1 Tbsp fresh thyme leaves (15 ml)
- Salt — kosher salt, to season (2 g)
- Pepper — freshly ground black pepper, to season (0.5 g)
- Olive Oil — 1/2 cup extra-virgin olive oil (120 ml)
Method
- Pour to the lines in order (bottom → top): Red Wine Vinegar, Sherry Vinegar, Cider Vinegar, Shallot, Thyme, Olive Oil.
- Add finishing notes: Salt, Pepper.
- Cap the jar and shake until emulsified.
