Ingredients

  • Shallotabout 1 shallot (40 g)
  • Balsamic2 Tbsp balsamic vinegar (30 ml)
  • Sherry Vinegar1 Tbsp sherry vinegar (15 ml)
  • Saltabout ¼ tsp (2 g)
  • Pepperabout ¼ tsp (0.5 g)
  • Olive Oil½ cup EVOO (120 ml)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, BALSAMIC, SHERRY VINEGAR.
  2. Add by count: 1½ SHALLOTS.
  3. Season to finish: SALT (to taste), PEPPER (to taste).
  4. Cap the jar and shake until emulsified.
