Ingredients
- Garlic2 small garlic cloves grated
- Hoisin1/4 cup (60 ml) hoisin
- Soy Sauce4 tsp soy/tamari (20 ml)
- Maple Syrup4 tsp maple syrup (20 ml)
- Rice Vinegar2 tsp rice vinegar or Shaoxing (10 ml)
- Five Spice1 tsp five-spice (5 ml)
Method
- Pour to the lines in order (bottom → top): HOISIN, SOY SAUCE, MAPLE SYRUP, RICE VINEGAR.
- Add by count: 4½ CLOVES GARLIC.
- Season to finish: FIVE SPICE (about 2 tsp).
- Cap the jar and shake until emulsified.

Can I use it as a marinade and a sauce?
Yes, but keep the portions separate. Never pour marinade that touched raw meat, poultry, or seafood back over the finished dish unless you bring it to a full boil first. Set aside a clean portion before marinating if you want a table sauce too.
