Ingredients

  • Sherry Vinegar10 tsp sherry vinegar (50 ml)
  • Shallotabout 1 shallot (30 g)
  • Hot Mustard1 tsp mustard (5 ml)
  • Peanut Oil20 tsp peanut oil (100 ml)
  • Saltabout ¼ tsp (2 g)
  • Pepperabout ¼ tsp (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): PEANUT OIL, SHERRY VINEGAR.
  2. Add by count: 1½ SHALLOTS.
  3. Season to finish: HOT MUSTARD (about 1½ tsp), SALT (about ½ tsp), PEPPER (to taste).
  4. Cap the jar and shake until emulsified.

What if it separates?

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
