Ingredients

  • Garlic5 garlic cloves
  • Anchovyabout 5 fillets (20 g)
  • Dijon Mustard3 Tbsp Dijon (45 ml)
  • Peppercorn1 Tbsp black peppercorns (15 ml)
  • Red Wine Vinegar¼ cup red wine vinegar (60 ml)
  • Tabasco½ tsp (3 ml)
  • Worcester1 Tbsp Worcestershire (15 ml)
  • Lemon Juicejuice of 1 lemon (30 ml)
  • Yogurt1 cup plain yogurt (240 ml)
  • Parmesan½ cup grated Parmigiano-Reggiano (+ ¼ cup finish) (120 ml)

Method

  1. This sauce needs a blender. The jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
