Ingredients

  • Pickled Ginger50 g
  • Leekabout 1½ leeks (150 g)
  • Light Soy3 Tbsp (44 ml)
  • Dashi2 Tbsp (30 ml)
  • Seas Rice Vinegar⅓ cup (76 ml)
  • Lime Juice2 Tbsp (30 ml)
  • Lime Zest1 g
  • Rapeseed Oilabout ¼ cup (54 ml)

Method

  1. Pour to the lines in order (bottom → top): SEAS RICE VIN, RAPESEED OIL, LIGHT SOY, DASHI, LIME JUICE.
  2. Shake-to-line (dashed marks): add PICKLED GINGER. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: 1½ LEEKS.
  4. Season to finish: LIME ZEST (about ½ tsp).
  5. Cap the jar and shake until emulsified.
