A marinade for seafood escabeche.

Ingredients
- Olive Oil1¾ cups (400 ml)
- Sherry Vinegar10 tsp Sherry Vin (50 ml)
- Orange Juiceabout ¾ cup (200 ml)
- White Wineabout 6 Tbsp (100 ml)
- Onionabout ½ onion (80 g)
- Carrot40 g
- Salt½ tsp (3 g)
- Pepperabout ½ tsp (1 g)
Method
- Pour to the lines in order (bottom → top): OLIVE OIL, ORANGE JUICE, WHITE WINE, SHERRY VINEGAR.
- Shake-to-line (dashed marks): add CARROT. Spoon in, shake, and top up until the settled level reaches each dashed line.
- Add by count: ¼ ONION.
- Season to finish: SALT (to taste), PEPPER (to taste).
- Cap the jar and shake until emulsified.
