Ingredients

  • Rhubarb1/2 cup pickled rhubarb rough chopped (70 g)
  • Cider Vinegar1/4 cup pickled rhubarb juice (60 ml)
  • Soy Sauce1/4 cup (60 ml)
  • Tarragon3 Tbsp chopped (6 g)
  • Mint1/3 cup chopped (12 g)
  • Scallion1 cup sliced (60 g)
  • Sambal1/2 Tbsp (7.5 ml)
  • Olive Oil1/4 cup EVOO (60 ml)
  • Tomato1 pint smoked grape + 1/2 pint sauteed grape halved (450 g)

Method

  1. Pour to the lines in order (bottom → top): Cider Vinegar, Soy Sauce, Sambal, Olive Oil.
  2. Add finishing notes: Rhubarb, Tarragon, Mint, Scallion, Tomato.
  3. Cap the jar and shake until emulsified.
