Ingredients

  • Mayo1 cup Duke's mayonnaise (240 ml)
  • Horseradish1 tbsp. grated or jarred horseradish (15 ml)
  • Grain Mustard2 tbsp. whole grain mustard (30 ml)
  • Celery2 stalks celery, diced
  • Shallot1 1/2 tsp. shallots, diced (7.5 ml)
  • Garlic1/2 tsp. garlic, minced (2.5 ml)
  • Parsley1 tbsp. parsley, chopped (15 ml)
  • Cornichon1 tbsp. cornichons, chopped (15 ml)
  • Lemon Zest2 g
  • Lemon Juice3 Tbsp (45 ml)
  • Capers1 1/2 tsp. capers, drained (7.5 ml)
  • Salt3/4 tsp. kosher salt (3.75 ml)
  • Pepper1/4 tsp. black pepper, ground (1.25 ml)
  • Cayenne1/8 tsp. cayenne (0.62 ml)

Method

  1. This sauce needs a blender. The jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
