- Grapeseed Oil3/4 cup plus 2 Tbsp grapeseed oil (210 ml)
- Arbol Chileabout 21 chiles (21 g)
- Guajillo3/4 oz guajillo chiles (about 3), stemmed, seeded and cut into pieces
- Black Garlic10 black garlic cloves, peeled and minced
- Garlic10 fresh garlic cloves, minced
- White Wine Vinegar1 Tbsp white wine vinegar (15 ml)
- Piloncillo1 Tbsp piloncillo or packed light brown sugar (15 ml)
- Cumin3/4 tsp cumin seeds (3.75 ml)
- Salt1 tsp kosher salt (5 ml)
Method
- This sauce is cooked on the stove. The jar is for storing it, not making it.
- Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
