- Jalapenoabout 2½ jalapenoes (35 g)
- Garlic1/2 cloves garlic
- Cilantroabout ¼ bunch (10 g)
- Sugarabout 2½ tsp (10 g)
- Salt2½ tsp (15 g)
- Cucumber Juiceabout 2 cups (450 ml)
- Apple Juiceabout ¾ cup (200 ml)
- Yuzu Juice½ cup (120 ml)
- Lime Juice1½ cups (360 ml)
- Cucumis1¾ cups (400 ml)
- Xanthanxanthan optional
Method
- Pour to the lines in order (bottom → top): LIME JUICE, APPLE JUICE, YUZU JUICE.
- Shake-to-line (dashed marks): add GINGER. Spoon in, shake, and top up until the settled level reaches each dashed line.
- Add by count: 1 SHALLOT, 1½ STALKS CELERY, ¾ JALAPENO.
- Season to finish: LEMONGRASS (¼ stalk), GARLIC (a pinch), CILANTRO (about 1½ Tbsp), SUGAR (about ¾ tsp), SALT (about ¾ tsp), CUCUMBER JUICE (to taste).
- Cap the jar and shake until emulsified.
