- Sherry1 cup sweet sherry, reduced to two-thirds (160 ml)
- Lime Relish4 tbsp Patak's Mild Lime Relish (60 ml)
- Mango Chutney4 tbsp mango chutney (60 ml)
- Red Wine Vinegar1 cup red wine vinegar (240 ml)
- Olive Oil1 cup extra virgin olive oil or canola oil (240 ml)
- Tarragon1 tbsp chopped fresh tarragon (15 ml)
- Saltabout ¼ tsp (2 g)
- Pepperabout ¼ tsp (0.5 g)
Method
- This sauce needs a blender. The jar is for storing it, not making it.
- Combine measured ingredients and blend until smooth.
- Taste and adjust salt and acid.
