Method

Pour to the lines in order (bottom → top): RED WINE VIN, OLIVE OIL.
Add by count: 4½ SHALLOTS, 3 THAI CHILES.
Season to finish: SALT (about 2 tsp).
Cap the jar and shake until emulsified.
