Method

Pour to the lines in order (bottom → top): OLIVE OIL, W.WINE VINEGAR, SHERRY VINEGAR.
Add by count: ½ SHALLOT.
Season to finish: THYME (to taste), GARLIC (1 clove).
Cap the jar and shake until emulsified.
