Ingredients

  • Dijon Mustard1 tbsp Dijon (15 ml)
  • Thyme1 tsp thyme (5 ml)
  • Lemon Juice1 tbsp lemon (15 ml)
  • Cider Vinegar1 tbsp cider vinegar (15 ml)
  • Olive Oil1/4 cup + 2 tbsp EVOO (90 ml)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, DIJON, LEMON JUICE, CIDER VINEGAR.
  2. Season to finish: THYME (about 1 Tbsp).
  3. Cap the jar and shake until emulsified.

What if it separates?

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
